Preparing for the Springtime: Why it's not just March the goes in like a lion and out like a lamb...

Although the calendar tells us that Spring isn't official for another 17 days, it's beginning to feel more and more like Spring and less and less like Winter.

This is one of my favorite transition times of the whole year!

Don't get me wrong, there are things about every season that I just love, but there is something about the temperature rising, the trees and flowers beginning to bud and the longer daytime that just really puts a smile on my face.

The extra sunshine is enough to get me to want to be outside.  I feel extra motivated and extra ready to spend more time active and less time hibernating in bed or camping out on my couch watching the next TV marathon of who knows what.

Does this time of year do the same for you?

If so, take advantage of it!

Now is the best time to make your plans for a happy and healthy springtime, summertime and even autumn!  This is the time for preparation.

Have you heard of spring cleaning?  Spring cleaning is more than just cleaning out the garage or your closets.  Spring cleaning can be applied to every aspect of your life.

Let your body wait for the thermometer to rise a little more before you rush out and take on the world but let your mind be active.

Plan now from the comforts of your home to really affect a positive change in your life.  It's a perfect time to plan out that next great adventure.

Take advantage of this transitional time.  Take advantage of the way the world outside is changing to welcome warmer weather and longer days.  Take advantage of the changing fruits and vegetables.  Take advantage of the way your body is changing as the days progress.

Whatever you do, take advantage of this day and make the most of it.  Life is not a dress rehearsal.


Speaking of transitions, we are undergoing a huge change in our seasonal foods as the Spring approaches.  

Slowly but surely we are leaving the heavier proteins and starches that our bodies needed in the winter for the lighter and greener foods of the spring.

Our Food Focus:  Cabbage!  Not just for St. Patrick's Day anymore!

Blanches Thai Cabbage

Prep Time: 5 minutes

Cooking Time: 5 minutes

Yields: 4 servings

Ingredients:
1 small cabbage, shredded (about 4 cups)
2 fresh red chilies, seeded and finely cut into strips
3 cloves garlic, minced
2 tablespoons coconut oil

Dressing:
1/2 cup rice milk
1 1/2 tablespoons fish sauce (use 1 tablespoon tamari for a vegetarian option)
2 tablespoons lime juice
2 teaspoons curry
1 tablespoon unsweetened shredded coconut

Directions:

1. Combine dressing ingredients in a bowl and whisk well.  Cover and refrigerate.

2. Bring a pot of water 2/3 full to a boil.  Blanch the cabbage for 1 minute.  Drain cabbage and put in  a salad bowl.

3. Heat a small pan over medium heat.  Add the oil, coating the pan.  Add the garlic and chilies; stir fry until the garlic is browned, then remove from heat.

4. Mix the dressing with the cabbage, garlic, chili and oil in a salad bowl.


Variations:  Sprinkle with roasted peanuts, coarsely chopped.
